Food Safety Supervisor

Course Details

The Brisbane Food Safety Supervisor Course teaches you the skills and knowledge necessary to safely store, prepare, display, dispose of, and serve food. In this course, you will learn to follow a set of predetermined procedures required by the food safety program.

The Brisbane Food Safety Supervisor Course applies to all food preparation establishments, whether permanent or temporary or just having a small food preparation area. These establishments include cafes, restaurants, hotels, clubs, functions, attractions, tour operators, events, attractions, conference catering, and exhibitions. It is also helpful in less prominent settings such as aged care facilities, hospitals, educational institutions, correctional centres, and defence forces. Even smaller food-orientated services such as canteens, kiosks, residential catering, fast food outlets, and in-flight and other transport catering require food safety skills.

The safe handling of food is typically based on practices carried out by an individual organisation. This program is based on the HACCP or hazard analysis and critical control points method but can also be applied to other food safety systems. This course is highly beneficial, if not essential, for those directly interacting with food in their day-to-day work. Food Safety Supervisor

Course Details

Safe food handling practices are critical in any establishment that prepares and serves food. It doesn't only apply to clubs, bars, restaurants, cafes, and hotels. The practice is just as important in event, exhibition, and conference spaces, along with hospitals, aged care facilities, military bases, correctional facilities, educational institutions, cafeterias, fast-food outlets, canteens, kiosks, in-flight and transport catering, and some tour operators.

Not all States and Territories require businesses with food preparation areas or permanent or temporary kitchens to have a designated food safety supervisor. But most establishments would certainly benefit from having someone who has completed a Food Safety Supervisor course.

Learners who complete the Food Safety Supervisor course will gain skills and knowledge about safe food handling practices throughout the food preparation cycle. From storing food safely, through to preparing, displaying, serving, and disposing of food safely. Learners will need to show competence in procedures described in a food safety program.

The Australia New Zealand Food Standards Code requires all food businesses to have a food safety program in place. And a food safety supervisor would have the necessary knowledge to implement and audit a food safety program that clearly defines safe food handling procedures specific to the business. Food safety programs are usually based on the Hazard Analysis and Critical Control Points (HACCP) method. However, the Food Safety Supervisor course equips learners with the necessary skills and knowledge to follow any other food safety system.

What You Will Learn

  • How to follow a food safety program
  • How to prepare and store food safely
  • How to achieve and maintain microbiological safety of food
  • Monitoring food temperature and using proper cooling and heating procedures
  • Proper thermometer use and recording procedures
  • Maintaining personal hygiene
  • Maintaining environmental hygiene
